Gujarati Muthia

I work in a place where more than half of the people are from Gujarat.  So recently I have started tasting lots of Gujarati Dishes and learning few of them.  This is one such dish which I really liked.  I wanted to try it and got the recipe from my friend.  Here goes the recipe.


Ingredients:
  1. Wheat Flour/ Atta - 1/2 cup
  2. Besan / Kadala Maavu - 1/2 cup
  3. Sooji / Rava - 1 cup
  4. Finely chopped Cabbage - 1 cup (acc to taste)
  5. Green Chillies - 2 (finely chopped)
  6. Ginger -  a small piece - finely chopped
  7. Ajwain / Cumin / Fennel - 1 tsp (either one is fine)
  8. Sour Cream - 1 tbsp ( acc to taste)
  9. Salt to taste
  10. Sugar - 2 tsp (acc to taste)
  11. Turmeric Powder - 1/2 tsp
  12. Eno Salt / Baking Soda - 1/2 tsp
  13. Coriander leaves - 1/4 cup finely chopped
For Seasoning:
  1. Oil - 2 tbsp
  2. White Sesame Seeds - 2 tsp
  3. Mustard Seeds - 1 tsp
  4. Hing - couple of pinches
Take a wide bowl, add all the ingredients one by one including the chopped cabbage and mix everything nicely with hand.  Add require amount of water to knead it as a smooth dough.  Sprinkle few drops of water to it and knead it.  Grease your hand and divide the dough to two equal parts. Roll it into a cylinder with one inch thickness.  Leave it for few minutes. 

Then cut that into four or five parts and place it in a idly plate.  Steam cook it for 25 to 30 minutes until it is nicely cooked.  To make sure it is fully cooked, we can check with a tooth pick.  It should come out clean.  Let it cool for few minutes.  When it is cold, cut it int to small cubes. 

Take a wide pan, pre heat oil, add mustard seeds and let it crackle.  Add white sesame seeds and let it fry until pink.  Add these cut Muthias to it in small batches and shallow fry it in medium flame until all the four sides of it becomes golden brown.  Garnish it with generous amount of coriander leaves.
