Pepper rice noodles / Milagu Sevai

I make this rice noodles/instant sevai at least once a week for my dad.  I have never made instant sevai with cumin and pepper powder.  I usually make it white sevai, yellow/lemon sevai.  I grabbed the idea of making this milagu sevai from Priya 's blog
she added roasted flax seeds powder along with pepper.  But i did not add flax seeds powder instead I added dry roasted cumin powder.  It came out pretty good and to my surprise, my girls also liked it. Here goes the recipe.



Ingredients:-
  1. Concord Rice Sevai - 1 1/2 cups
  2. Salt to taste
  3. Olive oil - 1 tbsp
  4. Mustard seeds - 1/2 tsp
  5. Urad dhall - 1/2 tsp
  6. Hing - couple of pinches
  7. Peanuts - 2 tbsp
  8. Pepper - 1 1/2 tsp (acc to taste)
  9. cumin - 1 1/4 tsp
  10. Coconut Oil - 3/4 tsp
  11. Coriander leaves - For garnishing. 
  •  Prepare the instant sevai / rice noodles according to the wrapper instructions. For one cup of noodles, boil 1 1/2 cups of water.  Add required amount of salt to the broken raw noodles.  Pour the boiling water to it and cover it nicely with a lid.  Leave it for 5 to 10 minutes so that it absorbs the whole water and becomes soft. If there is any excess water drain it and keep the noodles aside until you prepare the seasoning.
  • Mean time, dry roast black pepper and Cumin in a pan and grind it nicely ( my girls never like to bite coarse pepper).
  • Take a pan, pre heat oil, splutter mustard seeds, fry peanuts until golden brown.  Add urad dhall and hing to it and fry it until it becomes golden brown.
  • Now add the cooked noodles to it, reduce the flame and add the pepper-cumin powder to it and mix it well.  I added one and half tablespoon first and tasted it.  The spice was little less.  So again I added half a tablespoon of pepper powder.
  • Sprinkle the coconut oil and mix it well.
  • Garnish it with coriander leaves.
