Mixed Vegetable Rawa Idly

Another post after a week. I was kinda running between doctor's office and home cos one of my twin is sick and she has stomach flu. This is something I hate and it takes more than 10 days for my girls to start eating properly. I learned this from Sripriya's blog and tried this one for my other twin. She was not actually excitied after seeing vegetables in Idly, but she tried one and she liked it. My husband really liked the new changes in regular rawa idly. I followed almost the same recipe of Sripriya but skipped few vegetables. Here is the recipe...

Ingredients:-
  1. Coarse Rawa - 2 cups
  2. carrots - 1 (shred it)
  3. Peas - 2 tbsp (I used frozen)
  4. Beans - 2 tbsp (finely chopped)
  5. Green chillies - 2 (acc to taste)
  6. Ginger -  a small piece
  7. Yogurt - 1 cup
  8. salt to taste
  9. turmeric powder - 1/2 tsp
  10. oil- 2 tsp
  11. mustard seeds - 1/2 tsp
  12. urad dhall - 1/2 tsp
  13. cashew nuts- few
  14. Eno salt- 2 tsp
Take a wide bowl, add rawa, yogurt, salt, turmeric powder and vegetables and mix well. Also add oil, eno salt and add water accordingly to get it like  idly batter. Let it sit for half an hour. when you are ready to make idly, pre heat oil, in a pan, splutter mustard seeds, add urad dhall and cashew nuts and fry it to golden brown. Also add green chillies and ginger and fry it and pour it on top of the batter.  Now spray the idly moulds, add the batter and steam cook it for 10 to 12 mts.  Garnish it with coriander leaves.

Fried Idly

I had this fried Idly in Saravana Bhavan a few weeks back. I wanted to try fried idly this time. I used the left over idllies for making this fried idly. Since I just wanted to try this recipe, I used a little amount of ingredients. Here is the recipe for making fried idly

Ingredients:-
  1. Idly - 3
  2. Tomato - 1/2 (chopped)
  3. Onion - 1/2 (chopped)
  4. Green chillies - 1
  5. Salt to taste (only for onion and tomato)
  6. Turmeric powder - a pinch
  7. Asafoetida powder - a pinch
  8. Mustard seeds - little less than 1/4 tsp
  9. Cumin seeds - little less than 1/4 tsp
  10. Tomato ketchup - 1/2 tsp
  11. Coriander leaves to garnish.
  12. Oil - to fry idllies

First cut idllies into small cubes. Pre heat oil and fry the idllies to golden brown. Keep it aside. Pre heat a drop of oil in a pan, splutter mustard seeds and cumin seeds, add asafoetida powder. Now add onions and fry it till it becomes transparent. Now add tomato to it , add turmeric powder, salt and cook it for another 5 mts. Add a little bit of water to it, so that tomato and onion cooks nicely. It will become like a paste or like thokku. Now add the ketchup to it and mix it well. Now add the fried idlies to it and mix it well. Garnish it with corinader leaves. Serve it hot with onion raita. We can also add a pinch of garam masala powder to the tomato onion thokku.

Tomato Idly

This is something my mom used to make when I was a kid. Here is the recipe.

Ingredients:-
  1. Idly Batter - 2 cups (big)
  2. Tomato - 2
  3. Salt - only for tomato
  4. Green chillies - 1 (optional)
Take a microwave safe bowl, wash the tomatoes, put it in the bowl, microwave it for 2 to 3 mts. till its fully cooked. Let it cool and grind it adding required amount of salt (only for tomatoes) and green chillies. Add this to idly batter. Mix it well. Take the idly mould, spread some oil in it (preferably sesame oil) and pour the batter in the moulds and steam cook it for 15 to 18 mts. In order to see whether it is ready or not, use the back side of a spoon or knife or toothpick or match stick and insert it into the idly. It should come out clean when you take it, without any batter. This means the idly is ready to serve. Serve it with chutney or sambar

Idly

One of the most healthiest receipe. Its easy to make (ofcourse we need to prepare the batter!!) This is the most popular breakfast receipe. In my in laws place, we will have this for breakfast atleast thrice a week... I learned this receipe from my MIL and this is she do this everytime. The main ingredients are as follow...

Ingredients:-
  1. Idly Rice or Boiled rice - 3 cups
  2. Urid dal - 1 cup
  3. Fenugreek seeds - 1 tsp
  4. Salt - 11/4 tsp (or acc to taste)
Soak the rice for minimum 6 hours in water. Also soak urid dal and fenugreek seeds in the same container for 4 hours. can even soak it for 6 hours cos some people may forget to do that (ME!!). First grind the urid dal and fenugreek seeds in a wet grinder (or some kind of blender), adding water until it becomes thicker. It may take 25 to 30 mts. Urid dal needs more water than rice. When it is ready, pour it in a vessel. Now grind the idly rice in the same manner. This may take 30 to 35 mts. Now pour this batter into the urid dal batter. Add salt and mix it thoroughly with your hand(this is very important). Do not use spoon or spatula for mixing. Keep it aside, to ferment. Do not keep the batter in refrigerator before fermentation. I usually make this batter in the night around 8 pm and keep it aside. It will ready for next day evening tiffin.

To make idly, mix the batter well. Serve it with chutney or sambar(see receipe) or Idly molagapodi.
