This is a recent favorite of my girls. We were watching some lunch box ideas in YouTube.  I had my girls with me while I was watching so that they can suggest their ideas for packing their lunch box. The deal is they have to finish the lunch fully without any leftovers.

Tortilla Chips - Home made

This one of the easiest snack I have ever made.  In less than 15 minutes this chips can be made. We bought the Tortilla Land Wheat uncooked tortillas from Costco. I used these tortillas to make thse chips. Here is what i did.

Oatmeal - Breakfast in a bottle!

This is again another healthy breakfast recipe I tried yesterday.  I got the motivation from Pavithra's Facebook pictures.  Oatmeal is my almost everyday breakfast. I will just fill the one minute oats in a box and take it along to work and cook it there and eat it along with 6 or 7 almonds.  Now a days after so many beautiful pictures of mason jar breakfast ideas online, I really wanted to try making my own mason jar breakfast. When I was in the middle of filling the bottle, my girls got curious and wanted to make their own breakfast bowl.  I used an empty honey bottle to make this dish. Here is what I did.

Vegetable Idly

Pizza - Using Pizza Kit

This is just a review post.  We bought this Molinaro's stone baked organic pizza kit from Costco.  I thought of writing a simple review for the product.  I have used Pillsbury pizza crust before and tried once. But this is the first time where I am using an already baked pizza crust.

Banana Almond Butter Muffin

The goal for this new year is to use very less sugar in whatever I bake.  While going through many sites, I came to know that honey can be substituted as sugar along with fruits which are naturally sweet. I tried this muffin recipe this weekend and it came out spongy. I took the basic banana peanut butter recipe from allrecipes.com and changed the ingredients according to this muffin. Banana Walnut Bread

This is another goodie I baked during the Thanksgiving break this year! Saw bananas going bad on the counter top and wanted to make something with it.  Immediately this bread came to my mind.  Unfortunately my girls hate walnuts and bananas. When I said I need their help in baking this, they said a big NO. But I gave a bribe saying we will add some white chocolate chips along with the nuts.  It sounded like a good deal to them and we started our prep work :). Again I got the recipe from allrecipes.com and adjusted the ingredient quantity according to our requirement.

 I baked these cookies last week when my kids had Thanksgiving break.  It came out really really good.  I never thought I could really bake a buttery textured jam filled cookies.  I was browsing the allrecipes.com website and came across this one. Aloo Kachori


When we were in Delhi, we had chance to travel to many places in North India. I came across different types of kachoris during those trips. Every time we stop for breakfast or for snack, one of us will buy this and share it.  I never had the confidence to try making it at home.  Last week, when I started preparing for making samosas, I got the idea of trying Kachoris.  Below is the recipe, I followed to make this kachori.  I am not sure whether this is an authentic recipe.  But my girls and family liked it a lot.

Eggless Dates & Nuts Cake

I made this cake after reading the post from Sony's Kitchen.  I almost followed the same recipe except I used dark brown sugar instead of granulated white sugar.  When we melt the sugar in milk/oil, it will ooze out little bit more water than the regular white sugar.  So I had to add more flour to this cake than the original recipe.

Nutella Filled Puffs

I always wanted to try making veggie puffs.  Not sure whether i can do it or not.  Finally i managed to find the puff pastry sheets from my local grocery and tried this nutella filled puffs couple of days before. Potato-Quinoa Tikki

I got the idea of making this tikki after going through a post in www.foodily.com.  I know that making a tikki needs patience and I am not that good in making this one so far.  The post I saw was a Quinoa & beef patty.  I just took the idea of using quinoa in making tikki and used it here as per my whims and fancies. Here goes the recipe for making Quinoa-Potato Tikki.

Ingredients:

  1. Cooked Quinoa - 1/2 cup
  2. Medium sized potato - 1 (boil and mash it)
  3. Onion - 1/4 cup finely chopped
  4. Green peas - 1/4 cup ( I used frozen peas, cook it in microwave accordingly)
  5. Coriander leaves - 1/4 cup finely chopped 
  6. Salt to taste
  7. Ajwain/omam - 1/2 tsp
  8. Chilli powder - 1 tsp (acc to taste
  9. Garam Masala powder - 1/2 tsp
  10. Turmeric powder - 1/2 tsp (optional)
  11. Maida/Corn flour - for coating.
  12. Oil - 4 tbsp

Pepper-Corn Cheesy Pasta


Here is another dish I tried after checking out Raks Kitchen.  I followed almost the same method but not the same ingredients.Its too bad that I forgot to take a picture properly.  I remembered it later on and took the picture from the lunch box. My kids liked it except for the fact that I added a little bit more pepper and they don't eat spicy stuff much.  Here goes my recipe.

Choco Dates Nuts Balls

I wanted to try this dates balls after seeing Priya's Dates Peda.  I wanted to try this sometime this week.  Yesterday my kids wanted to eat laddoo all of a sudden. I am not good in making laddoo so I tried convincing them that I will make something else. So started making this peda and instead of making it as peda I just rolled it and made it laddoo. They were not happy to see brown color laddoo (thats what they said), but they liked the taste.  I added couple of more ingredients to her recipe and made it choco balls.

Ingredients:-
  1. 2 tbsp Crumbled Paneer.
  2. 1/4 cup dates (which came around 7 seedless dates)
  3. Milk - little more than 1/4 cup ( I used the regular milk)
  4. Cinnamon -  a pinch
  5. Ghee - 2 tsp
  6. choco syrup - 1 tsp
  7. Almonds & Walnuts (mixed) - 1 tbsp
Soak dates in milk for an hour. Then grind the milk-dates mix along with paneer and make it a paste. I also followed Priya's method. Just microwaved it for 6 mts. Stir it in between. Add cinnamon and chocolate syrup in between while stirring. When the paste comes like a ball, add melted ghee and make it small balls. In the mean time, grind the nuts into fine powder and roll the choco balls in it and serve it hot. It tastes really good. I just made 6 balls cos I was not sure whether my girls will like it or not. After finishing them, they quietly told me that it tasted like dates  and not like chocolate balls :). I am sending this to Srivalli's  kid's delight - Finger Food. Also this goes to Nivedita's MEC- Fruits event, started by Srivalli.

Vegetable cutlet

I always like to eat this cutlet whenever I go out to restaurants. But never tried this at home. This time I just wanted to give a try. Here is the recipe I followed to make this cutlets.

Ingredients:-
  1. Potato - 2 (I used small potatoes)
  2. Carrots - 1 (shred the carrot)
  3. Beetroot - 1 (small - shred)
  4. Green onion - 2 tbsp
  5. Salt to taste
  6. Cashews - few
  7. Red chillies powder - 1 tsp
  8. Garam Masala powder - a pinch
  9. Besan flour - 1 tsp
  10. Turmeric powder - a pinch
  11. Oil - 1 tsp
  12. Mustard seeds - 1/4 tsp
  13. Cumin seeds - 1/4 tsp
  14. Coriander leaves - few
  15. Bread crumbs - 2 tbsp

First cook one potato, mash it and keep it aside. In the mean time, shred the other potato, carrot, beetroot and cut green onions. Take a pan, pre heat oil, splutter mustard and cumin seeds, add the cashews, fry it for couple of minutes, add the shredded vegetables, mash the cooked potato, add it to the shredded veggies, add turmeric powder, red chillies powder, salt and let it cook for the next 5 to 7 mts. Sprinkle water if necessary. Now add coriander seeds and garam masala powder now and mix it together. Also add the besan flour and mix it with the cooked vegetables and make sure no lumps are formed in it. Turn off the stove and let it cool. Place the bread crumbs in a plate and make small patties (or make shapes you like) and dip it in the bread crumbs. In the mean time, pre heat dosa pan, spray some oil in it. put the dipped patties in the pan and fry it till it becomes golden brown. Serve it hot with tomato ketchup. This is a kid friendly snack I would say. I girls ate two cutlets each with tomato ketchup.
