Rasvali - Mixed Vegetable Gravy & Entries for Rice Event

This is absolutely new recipe for me which I got from one of my good friend Rani. I hope I spelled it right. She emailed me this recipe and asked me to try it out. I tried this yesterday and as she said, it tastes really good and goes really well with rice and can be used as side dish for roti, dosa etc. Here is the recipe..

Ingredients:-
  1. Potato - 4 (medium sized) (chop it into cubes)
  2. Carrot - 2 (chop it into cubes)
  3. Peas - 1/4 cup ( i used frozen)
  4. Onion - 1 (if its medium or 1/2 if its big)
  5. Tomato - 1 (chop it)
  6. Coriander powder - 1 1/2 tsp
  7. Cumin Powder - 1/2 tsp
  8. Red chillies powder - 1/2 tsp (acc to taste)
  9. Salt to taste
  10. Turmeric powder - 1/2 tsp
  11. Jaggery - 1 1/2 tsp
  12. Peanut powder - 3 tsp (acc to taste)
  13. White Sesame seeds - 1/4 tsp **
  14. Tamarind paste - 1/4 tsp **
  15. oil - 2 tsp
  16. Cumin seeds - 1/2 tsp
  17. fennel seeds - 1/2 tsp
  18. Coriander leaves - for garnishing.
First dry roast peanuts and white sesame seeds to golden brown and grind it into a fine powder. Keep it aside. In the mean time, take a pan, add potato, carrots & peas, add required amount of water and let it cook. Drain it when it is done and keep it aside. Pre heat oil in a pan, splutter cumin and fennel seeds, add onion and saute for few minutes. Now add tomato and saute for few seconds and add the cooked vegetables, required amount of water (say about half a cup), turmeric powder, salt, tamarind paste, cumin powder, chilli powder and coriander powder and let everything cook together really well. Add water if necessary. Add the grounded peanut+sesame seeds now along with jaggery and let them cook for another couple of minutes. Consistency will be like sabji. Add water to adjust the required consistency. Garnish it with coriander leaves. It really goes well with rice which we tried yesterday. I just followed the same recipe she emailed me. But I added couple of more ingredients. They are...

** - In the original recipe, there was no tamarind or white sesame seeds. But I added those two which I think was a good idea cos my hubby could not figure out whether it is a sambar or not (LOL)

Mixed Vegetable Rawa Idly

Another post after a week. I was kinda running between doctor's office and home cos one of my twin is sick and she has stomach flu. This is something I hate and it takes more than 10 days for my girls to start eating properly. I learned this from Sripriya's blog and tried this one for my other twin. She was not actually excitied after seeing vegetables in Idly, but she tried one and she liked it. My husband really liked the new changes in regular rawa idly. I followed almost the same recipe of Sripriya but skipped few vegetables. Here is the recipe...


Ingredients:-
  1. Coarse Rawa - 2 cups
  2. carrots - 1 (shred it)
  3. Peas - 2 tbsp (I used frozen)
  4. Beans - 2 tbsp (finely chopped)
  5. Green chillies - 2 (acc to taste)
  6. Ginger -  a small piece
  7. Yogurt - 1 cup
  8. salt to taste
  9. turmeric powder - 1/2 tsp
  10. oil- 2 tsp
  11. mustard seeds - 1/2 tsp
  12. urad dhall - 1/2 tsp
  13. cashew nuts- few
  14. Eno salt- 2 tsp
Take a wide bowl, add rawa, yogurt, salt, turmeric powder and vegetables and mix well. Also add oil, eno salt and add water accordingly to get it like  idly batter. Let it sit for half an hour. when you are ready to make idly, pre heat oil, in a pan, splutter mustard seeds, add urad dhall and cashew nuts and fry it to golden brown. Also add green chillies and ginger and fry it and pour it on top of the batter.  Now spray the idly moulds, add the batter and steam cook it for 10 to 12 mts.  Garnish it with coriander leaves.

Mixed Vegetable Rice

This was our dinner yesterday. It came out very well. The main ingredients are as follow:
Ingredients:
  1. Basmati Rice - 1 cup (measuring cup) (soak it for 5 mts.)
  2. Carrot - 1 - (Chopped in an inch size) (if its a big carrot use only 1/2 carrot)
  3. Peas - 3 tbsp
  4. Potato - 1 (chopped in an inch size)
  5. Onion - 1 finely chopped
  6. Garlic - 1 clove finely chopped
  7. Oil - 2 tbsp
  8. Butter - 1 tbsp (unsalted)
  9. Mustard seeds - 1 tsp
  10. Cumin seeds - 1 tsp
  11. Coriander powder - 1 tsp
  12. Salt to taste
  13. Cardamom - 1
  14. Cloves - 1
  15. Bay leaf -1
  16. Cashews - 5 to 7 (acc. to taste)
  17. Fresh coriander leaves - 2 tbsp (finely chopped)
First, clean the rice and cook it up to 1 or 2 whistles. Do not over cook. Keep it aside and let it cool. Now take a wide pan, preheat the oil, add mustard seeds, when it splutters add cashews, cumin seeds, Cardamom, cloves bay leaf and vegetables to it. Add 1/2 cup of water and let it cook for 5 to 7 mts. Now add coriander powder and salt to it. Stir it carefully (do not mash the vegetables). Now mix the vegetables with the rice. While mixing the vegetables with a spatula, make sure it won't mash the rice. Now pour the Butter on top it and garnish it with coriander leaves. Now mixed vegetable rice is ready to serve. Potato chips or Onion raita can be a good side dish. We can also replace ghee and oil with cooking spray...

Mixed Vegetable Pickle

This is something I used to buy from grocery store. This time I just wanted to try by myself with a handful of veggies. Since I am the only person here in my house who eat pickle very often, I just tried with a little quantity of veggies.Here is the recipe.

Ingredients:-
  1. Carrot - 3/4 (chop it into 1" size)
  2. Lime - 1 (small - chop it into tiny pieces)
  3. Lemon - 1 (small - chop it into tiny pieces)
  4. Mango - 3 tbsp (chop into 1" size)
  5. Bittergourd - 1/2 (chop it into 1"size)
  6. Turmeric powder - 1/2 tsp
  7. Red chillies powder - 1 tsp (acc to taste)
  8. Salt to taste
  9. Sesame Oil - 4 tbsp
  10. Mustard seeds - 1/2 tsp
  11. Asafoetida powder - a pinch
  12. Asafoetida powder - 1 tsp

There are two ways of making this pickle. First one is microwave the Veggies, lemon and lime for 3 mts. till it 3/4th cooked and season it. But I didn't microwave the veggies, I cooked it on stove top. Take a pan, pre heat oil, splutter mustard seeds, add asafoetida powder and add all the veggies and saute' for a minute. Now add turmeric powder, red chillies and salt and sprinkle a hand full of water and let it cook. When the veggies are fully cooked, add asafoetida powder and mix it well. Do not mash the veggies and do not over cook the veggies. This can be a wonderful side dish for curd rice.

Mixed Vegetable Kurma

This is the easiest way of making Kurma. Believe it or not, it just took me 10 to 15 minutes to finish. Thought of sharing this with you. If you are using frozen veggies or cut veggies just grab cauliflower, beans, peas, carrots, Lima Beans from frozen section. It will take less time if frozen veggies are used.
Ingredients:
  1. cauliflower - 1cup
  2. beans - 1/2 cup
  3. peas - 3 tbsp
  4. carrots - 4 tbsp
  5. lima beans - 2 tbsp
  6. potato - 1 (cut it into small cubes)
  7. onion - 1
  8. Tomato - 1(if its big or 2 if its small)
  9. Salt to taste
  10. oil, mustard seeds, cumin seeds for seasoning.
  11. Unsalted butter - 1tbsp
  12. Turmeric powder - 1/2 tsp.
  13. Coriander leaves - 1tbsp.
Masala Ingredients:
  1. coriander seeds -2 tbsp
  2. channa dal - 1 tbsp
  3. cashews - 5
  4. Almonds - 2 (soak it in water and remove the skin)
  5. fresh coconut - 2 tbsp
  6. Onion and Tomato (given in ingredients)
  7. 2 cloves garlic
  8. Green chillies - 3
Grind the above said masala ingredients to paste. Microwave(or cook) the above given vegetables for 3 to 4 mts. In a separate pan pre-heat the oil and butter, season it with mustard seeds and cumin seeds to golden brown. Add the masala paste, turmeric powder to it and also add 1/2 cup of water and let it cook for 3 mts. Now add the cooked vegetables to it and let it cook for another 4 mts. Stir it thoroughly. Season it with fresh coriander leaves. This kurma can be used as a side dish for Chapathis, Poori, Dosa or Idly. The above said quantity will serve atleast 5 people.
