Salad 2

This is another version of Salad I make very often. This is something in which there i no nuts or fruits.  Here is the recipe.

Ingredients:-
  1. Lettuce - 1 
  2. Cucumber - 1
  3. Green, Red & Yellow Capsicum/Bell Pepper  -   1/2 each (depending upon the size)
  4. Coriander leaves - 3 tbsp
  5. Carrot - 1 
  6. Broccoli -  1 cup Florets
  7. Olive Oil - 1 tbsp
  8. Lemon Juice - 2 tsp (as per taste)
  9. Salt to taste
Chop all the vegetables finely. Mix everything in a bowl adding required amount of salt.  Add lemon juice & olive Oil and mix everything well.

Veggie Salad Cum Sundal

This is something I got the recipe from a magazine and I wanted to try this for Navarathri as sundal (!). It was really colorful and the left over was used as salad.

Ingredients:-
  1. Baby corn - 4
  2. Baby Carrots - 3
  3. Moong sprouts - 1/4 cup
  4. Mango - 2 tbsp
  5. Salt to taste
  6. Lemon juice - 2 tsp
  7. Pepper - a pinch
  8. Coriander leaves - few

Chop Baby corn and carrots into small pieces. In the mean time, microwave or steam cook the sprouts till it becomes softer. Drain the excess water and add it to corn and carrots. Chop mango into small pieces to match carrots and corn. Add it to the sprout mixtures. Add salt and pepper, lemon juice and coriander leaves and mix it well. Here we can also use green chillies in the place of black pepper.

Carrot Salad

This is the easiest salad I have ever seen. This is something I make everyday without fail so that my girls can eat carrot. Here is the recipe.

Ingredients:-
  1. Carrot - 1 cup (chopped into very tiny pieces)
  2. Onion - 1/2 cup (chopped into small pieces)
  3. Red Raddish - 2 tbsp (chopped into small pieces) (optional)
  4. Salt to taste
  5. Lemon Juice - 3 tbsp (acc to taste)
  6. Green chillies - 1 (chopped finely) (optional)
Seasoning:- (optional)
  1. Oil - 1/4 tsp
  2. Mustard seeds - less than 1/4 tsp
Mix carrot, onion, red raddish, salt, green chillies and lemon juice and shake everything well. Preheat oil in a pan, splutter mustard seeds and pour it on top of carrot mixture. This is a easy salad we can make everyday. I usually just mix everything and never season it. Seasoning is really to increase the taste of the salad.
